Ingredients:
- 1/2 cup sugar-free chocolate chips
- 1/4 cup coconut oil
- 1/4 cup powdered erythritol
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions:
In a microwave-safe bowl, combine the sugar-free chocolate chips and coconut oil
Microwave in 30-second intervals, stirring in between, until melted and smooth
In another bowl, mix the powdered erythritol, heavy cream, vanilla extract, and salt until well combined
Slowly pour the cream mixture into the melted chocolate mixture, stirring continuously until fully incorporated
Pour the mixture into candy molds or small silicone molds
Place the molds in the refrigerator and let the candies set for at least 2 hours, or until firm
Once set, remove the candies from the molds and store them in an airtight container in the refrigerator until ready to serve
